Food Focus: Baby Bok Choy


Baby Bok ChoyBok Choy has long been my favorite green leafy vegetables, and when I introduce my clients to this wonderful vegetable they love it too. What's even better than bok choy is baby bok choy.  It's not available much of the year, so when I saw it at the famers' market this week I just had buy some. 

Tender baby vegetables are one of the pleasures of spring. Baby bok choy tastes like regular bok choy but it is more tender and milder in flavor.

Baby Bok Choy Stir Fry

Ingredients:
4 bunches baby bok choy
1 onion chopped
2 cloves garlic sliced thin
2 tablespoons olive oil
Pinch sea salt
Umeboshi vinegar to taste (optional)

Cooking Instructions:

1. Wash and chop baby bok choy.
2. Heat oil in a pan. Add onions and saute for 5 minutes.
3. Add baby bok choy and garlic.
4. Stir over medium heat until the greens are wilted and the stems are tender.
5. Remove from heat and season with salt and umeboshi vinegar.
