Stir-Fried Bok Choy with Roasted Walnuts

Prep time: 5 minutes
Cooking time: 10 minutes

Bok choy is one of my favorite dark leafy green vegetables.  It is very delicate and cooks quickly.  The walnuts in this recipe add a lot of flavor and some good fat.  Add some brown rice and you have a light meal.

Ingredients:

3 tbsp walnuts
2 tsp peanut oil
1/4 tsp red pepper flakes
salt
1 large bunch bok choy
4 garlic cloves, minced
4 tsp minced ginger
2 tbsp soy sauce
2 tbsp sesame oil


Cooking Instructions:

1. Fry walnuts until golden in 2 tsp peanut oil with pepper flakes and salt. Set aside.

2. Wash and chop bok choy stems and leaves.

3. Set wok (or pan) on high heat. Add 2 tbsp sesame oil and roll it around the sides of pan.

4. When hot, add garlic and ginger and stir-fry for 1 min.

5. Add bok choy and a few pinches salt and stir-fry until wilted and glossy.

6. Add soy and cover until bok choy is shiny and glazed.

7. Add crushed walnuts, toss and serve
