Cornbread

Warm, moist cornbread is such a treat – especially on a cold winter night. This recipe makes a healthier, heartier cornbread that is quick and easy to make. I just served this with black bean soup at my book group and it got raves. Enjoy!  

 

Ingredients:

2 cups cornmeal
1 cup unbleached white flour
1 cup whole wheat pastry flour (regular whole wheat flour also works)
4 teaspoons baking powder
1/2 cup safflower oil
1/2 cup maple syrup
2 cups milk
1 teaspoon salt 

 

Cooking Instructions:
1. In small bowl mix dry ingredients, except salt, together.
2. In large bowl, mix wet ingredients together with salt.
3. Pour dry into wet ingredients and mix together.
4. Pour into oiled 10” x 13” baking pan and bake at 350° for 30 minutes, or until toothpick comes out clean.
