Food Focus: Bananas

Bananas are a great source of potassium which helps to maintain blood pressure and heart function.  Potassium is also important for maintaining good energy. Bananas may be a good choice if you experience muscle cramping, as they help regulate your fluids and dehydration is a common reason for cramping. Lastly, bananas contain what's called a prebiotic which helps your body absorb calcium.

Banana Peanut  Butter Ice Cream

As soon as the weather gets warm, I start to crave ice cream.  So, I was excited to find a healthy version that really satisfies! 

Ingredients:

2 peeled and frozen bananas
2 Tablespoons peanut butter


Directions:
Combine ingredients in food processor and blend. You may have to scrape the banana from the sides of the food processor mid-way through blending. Eat immediately :).

Variations:
You can use almond butter in place of peanut butter, or create a fruit version by blending in 1/2 cup of berries instead of the peanut butter.
